Welcome to Wild & Tamed
In December 2013 in our small cafe, we added some potato skins to some local grains and watched as the wild yeasts of Bendigo developed. With the daily help of our baker taming the wild yeast, the good outweighed the bad and our unique desem starter was produced. This tamed desem starter is the base of all of our sourdough breads, and is where the wild flavours come from...
Word about the high quality of our product quickly spread. A window of opportunity opened for our small cafe to grow and soon we were operating 24 hours 7 days a week. As the popularity of our products increased, we quickly outgrew our premises and decided to move the bakery to a new, bigger location.
Our bakers and chefs work hard together to develop new wild and elaborate ranges of flavoured breads. Some are wild and some are tame, but all are of the highest quality and made with the finest ingredients.
We know fresh is best, so all of our breads are mixed, baked, packed and delivered to you on the same day.
